Banana and Quinoa Pancakes
Pancakes for breakfast – it doesn’t get much better than that. Except when you load them full of banana and quinoa. Try this delicious recipe as a fun alternative to plain pancakes while you’re out on the road.
Ingredients
- ½ cup cooked quinoa, cooled
- ½ mashed banana
- 1 whole egg beaten
- Cinnamon to taste
- 1 cup all-purpose flour
- ½ cup skim milk
Method
- Whisk the egg in a large bowl before mixing in the other ingredients.
- Cook in a lightly greased skillet until brown on each side.
- Coat with either syrup or your preferred topping and enjoy!
