Banana and Quinoa Pancakes

Pancakes for breakfast – it doesn’t get much better than that. Except when you load them full of banana and quinoa. Try this delicious recipe as a fun alternative to plain pancakes while you’re out on the road. 

Ingredients

  • ½ cup cooked quinoa, cooled
  • ½ mashed banana
  • 1 whole egg beaten
  • Cinnamon to taste
  • 1 cup all-purpose flour
  • ½ cup skim milk

Method

  • Whisk the egg in a large bowl before mixing in the other ingredients. 
  • Cook in a lightly greased skillet until brown on each side.
  • Coat with either syrup or your preferred topping and enjoy!
