Aromatic Slow Cooked Beef
This super-easy one-pot dish is a god send now that winter is well and truly here. Follow this recipe from Outbackchef.com.au for some mouth-watering bush tucker you can enjoy on those chilly winter nights.
Ingredients
- 500g of casserole beef, chopped into chunks
- Oil to sauté the beef
- 1 brown onion – chopped
- 2 carrots – chopped coarsely
- 6 Brussels sprouts – quartered
- 1 teaspoon coarsely ground pepperberry or black pepper
- 1 dessertspoon ground bush tomato or regular tomato paste
- 1 teaspoon anise myrtle or ground fennel seeds
- 1 dessertspoon soy sauce
- 2 dessertspoons grated green ginger
- 3 Star Anise
- 500 ml beef stock
- 1 teaspoon ground cinnamon
Method
- Add beef and oil to a camp oven or deep cooking pot and sauté with the onions until brown
- Add the veges, spices and beef stock to the pot
- Cook 2 ½ hours, add a little water if necessary
- Serve with rice or cous cous
